Sweet: Jamaican Jackass Corn

Posted by Charlene Collins (Kingston, Jamaica) on 9 July 2011 in Landscape & Rural and Portfolio.

A traditional Jamaican sweet.
A thin crisp biscuit made with flour. grated coconut, nutmeg , sugar and cinnamon. It is very TOUGH.
I suspect the name comes from being tough and stubborn like a jackass
